To make it, candy is cooled to freezing temperatures. Then a vacuum pump lowers the pressure while heat is applied. “It transforms chewy or soft candy into a light, airy, and crunchy treat, while making the sweet or sour flavors more vibrant,” says Cody Arnold, who works at the Freeze Dried Candy Store in Gallatin, Missouri.
